Use them to get to your hunting patch.
And hunt on foot.
Critters don't like single cylinder engines.

We do JR. Mine is the black CF Moto pictured.
A couple of minuses about using a quad getting about.
(a) They are not the easiest thing following animal pads. A motorbike is better for those. Or on foot.
(b) Quads and eroded station tracks mean you are spending a long time with the bike leaning over one way, or another.
(c) The previously mentioned single cylinder syndrome.
(d) You can easily come undone on the simplest terrain by looking not where you are going. Australia seems to be full of stuff like gullies, stumps and rocks. Learn to fall off the right way!

That said, you can cart heaps more than you otherwise would on a two wheeler. Mapping, glassware, WATER, 1st aid, dressing, different clothes, Tyre repair gear, spare fuel and spares, dogs and the odd feed back to camp. All easy with the right bags and attachments.
They excel on soft ground, and the right bike will get around the hills a bit.
You can spotlight from them.

Some properties I've been on, you can rack up a couple of hundred kays a day just scoping a joint out.
Keeping the dust/mud and debris out of your firearm is really more important than having it ready to fire in seconds.

You've no location in your profile, so I can't help you much more.
Feel free to pm about anything.
